Apple Snow


Ingredients

3 dessert spoons gelatine

2 egg whites

1/2 Cup hot water

1 lb apples peeled and cored

2 Cups water

3/4 Cup sugar

a few cloves (if desired0

rind and juice of half a lemon

Instructions

Cook apples with the water, grated lemon rind and juice, and cloves, until tender. Add sugar and cook a little longer. Press through a sieve. Dissolve gelatine in hot water, add to apples. When cold, whisk in the beaten whites of eggs. Pour into a wetted
