1 10-inch baked pie shell1 Tablespoon unflavored gelatin1/4 cup cold water1/2 Cup sugar1 Tablespoon instant coffee3 well beaten egg yolks1 Cup water1/4 teaspoon salt3 stiffly beaten egg whites1/2 Cup sugar1 teaspoon vanilla
Soften gelatin in 1/4 cup water. Sift together 1/2 cup sugar and coffee. Beat into the egg yolks. Gradually stir in water and salt. Cook over boiling water 5 minutes, stirring constantly. Add gelatin and stir until dissolved. Chill until mixture thickens
