Coffee Chiffon Pie


Ingredients

1 10-inch baked pie shell

1 Tablespoon unflavored gelatin

1/4 cup cold water

1/2 Cup sugar

1 Tablespoon instant coffee

3 well beaten egg yolks

1 Cup water

1/4 teaspoon salt

3 stiffly beaten egg whites

1/2 Cup sugar

1 teaspoon vanilla

Instructions

Soften gelatin in 1/4 cup water. Sift together 1/2 cup sugar and coffee. Beat into the egg yolks. Gradually stir in water and salt. Cook over boiling water 5 minutes, stirring constantly. Add gelatin and stir until dissolved. Chill until mixture thickens
