Carrot Cake


Ingredients

2 Cups flour

2 teaspoons soda

2 teaspoons cinnamon

1/2 Tablespoon salt

3 large eggs

3/4 Cup oil

3/4 Cups buttermilk

2 teaspoons vanilla

2 Cups sugar

2 Cups grated carrots

1 Cup well drained crushed pineapple

1 Cup coconut

1 Cup chopped nuts

Sift together the flour, soda, cinnamon and salt; set aside. In mixing bowl, blend eggs, oil, buttermilk and vanilla. Mix well; add and blend sugar and the dry ingredients. Mix well. Stir in grated carrots, pineapple, coconut and nuts. Turn into a well gr
